Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tsp oregano or Italian seasoning
  • 1 tsp garlic powder
  • Sea salt and pepper, to taste
  • 1 cup fresh blackberries, gently smashed
  • 4 small jalapeños, sliced (seeds removed for less heat)
  • 4 thick slices of mozzarella or provolone cheese
  • 2 Tbs avocado oil (or your choice of olive oil, grass‑fed butter, or coconut oil)
  • ½ cup dry white wine or chicken bone broth
  • Fresh parsley or basil, chopped (for garnish)

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts all over with oregano, garlic powder, salt, and pepper.
  3. Carefully slice each breast lengthwise, stopping just before the other edge to create a pocket.
  4. Stuff each pocket with one cheese slice, a few jalapeño slices, and a spoonful of the lightly mashed blackberries. Secure with toothpicks if needed.
  5. Heat the oil in a large, oven-safe skillet over medium heat. Add the chicken and sear until beautifully golden, about 4 minutes per side.
  6. Pour in the wine or broth to deglaze the pan, letting the flavors meld.
  7. Transfer the skillet to your preheated oven and bake for 12 – 15 minutes, or until the chicken reaches 165°F (74°C).
  8. Let the chicken rest for a few minutes, then garnish with fresh parsley or basil before serving.
