Some breakfasts are quick and practical, and then there are the ones you slow down for – the kind that feel a little indulgent and make the whole house smell amazing. For me, French toast is one of those breakfasts. It’s simple enough to pull together on a weekend morning, but it still feels special, like you’ve taken a little extra time to care for yourself (or the people you’re cooking for!).
I stumbled on a version of French toast and made a couple of tweaks that adds just a touch differency from the usual and it’s now my go-to. The secret? A little bit of flour whisked into the custard! It sounds odd at first, but it transforms the texture, making the toast extra soft and fluffy inside while keeping that golden, lightly crisp crust we all love.

Fluffy French Toast
Ingredients
- ¼ cup all-purpose flour
- 1 cup milk (or swap in half-and-half for extra richness)
- 3 large eggs
- 1 tablespoon white sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- A pinch of salt
- 12 slices of sturdy bread (brioche, challah, or sourdough work beautifully)
Directions
- Start with the custard. I whisk the flour and milk until smooth (no lumps—you want it silky), then add in the eggs, sugar, vanilla, cinnamon, and salt. It turns into a cozy, spiced mixture that already smells good before it even hits the pan.
- Soak the bread. I dip each slice just long enough to let it drink up the custard without getting soggy. No more than 5 minutes
- Cook until golden. On a buttered skillet over medium heat, I cook each side for about 2–3 minutes, flipping when it’s beautifully browned.
- Serve warm. This is the fun part – I stack them high, dust with powdered sugar, drizzle with maple syrup, and sometimes berry compote on top!
