Peach & Herbed Ricotta Toasts

Peaches have always been one of my favorite summer fruits, I wait all year for that perfect, juicy sweetness! So when I came across this idea for Peach Bruschetta with Whipped Ricotta and Hot Honey, I knew I had to try it. It turned out even better than I imagined: creamy, tangy, sweet, and a little spicy all in one bite. My husband isn’t always the biggest fan of fruit in savory dishes, but even he loved this recipe and went back for THIRDS (which is always the best compliment in my book).

Ingredients

  • Whole-wheat baguette, sliced (about 12 pieces, ¼-inch thick)
  • ¾ cup ricotta cheese
  • 1 tablespoon finely chopped fresh herbs (basil, mint, or both), plus extra for garnish
  • 2 teaspoons olive oil
  • 1 teaspoon hot honey (or regular if you prefer mild)
  • Pinch of salt
  • 1 small peach, chopped (about 1¼ cups)
  • Balsamic glaze, for drizzling

Directions

  1. In a small bowl, stir together the ricotta, herbs, olive oil, hot honey, and salt until creamy.
  2. Lightly toast the baguette slices until golden and crisp.
  3. Spread each piece with the ricotta mixture, then top with a spoonful of peach.
  4. Drizzle with balsamic glaze and finish with extra herbs. Serve immediately and enjoy!

A Little Extra Inspiration

  • Swap the fruit: Nectarines, apricots, or even cherries would work beautifully.
  • Switch up the cheese: Try goat cheese or mascarpone if you want something richer.
  • Turn up the heat: Use chili-infused honey for extra spice.
  • Add crunch: Sprinkle with toasted walnuts, pistachios, or pine nuts.
