This is the salad I come back to again and again. It’s bright, fresh, and full of flavor – thanks to creamy avocado, salty feta, and a punchy, made-at-home Italian dressing. It’s my go-to side for grilled chicken, pasta nights, or just when I want something quick and refreshing that doesn’t feel boring.

Ingredients

  • 1 head of romaine or iceberg lettuce, chopped
  • 1–2 ripe tomatoes, diced
  • ½ avocado, sliced or cubed
  • Crumbled feta cheese (as much as your heart desires!)
  • Optional: sliced cucumbers, red onion, olives

Salad Dressing

  • 1 packet of Good Seasons Italian Dressing Mix
  • Oil, vinegar, and water (as directed on the packet

Directions

  1. Make the Dressing: Follow the directions on the packet to prepare the Italian dressing in a cruet or jar. Shake well and let it sit while you prep the salad.
  2. Assemble the Salad: In a large bowl, toss together chopped lettuce, tomato, avocado, and crumbled feta. Add any optional ingredients if you’re feeling fancy.
  3. Dress and Serve: Pour the dressing over the salad just before serving and toss to coat evenly. Start with less and add more to taste—this dressing has bold flavor!
  4. Make It a Meal: Add grilled shrimp, chicken, or chickpeas to turn this side into a full dinner.
